Citrus Couscous Salad
Fluffy couscous is the backdrop for this refreshing combination of citrus with mint, red onion and feta cheese. Serve for lunch or as a quick but special side salad.
¾ cup dry couscous
¼ cup finely chopped fresh mint
3 Tbsps. white wine vinegar
2 Tbsps. minced red onion
2 Tbsps. minced fresh jalapeño pepper
2 tsps. olive oil
½ tsp. salt, optional
2 cups Del Monte® Mandarin Oranges Fruit Cup® Snacks No Sugar Added or Citrus Salad well drained
½ cup crumbled feta cheese
¼ cup sliced almonds, optional
Place couscous in a medium bowl. Add 3/4 cup boiling water; cover tightly with plastic wrap and let stand 5 minutes. Fluff couscous with a fork.
Stir mint, vinegar, onion, jalapeno, olive oil and salt, if desired, into couscous. Refrigerate 15 minutes or until cool.
Stir in citrus segments, feta and almonds, if desired. Serve chilled or at room temperature.
