Pineapple French Toast

A morning treat that the whole family will love! With similar flavors to Pineapple Upside Down Cake, this french toast is perfect for brunch.
8 thick slices brioche
4 eggs
½ cup full fat coconut milk
1 tsp. vanilla extract
2 cups Gold Deluxe Pineapple Chunks, drained
2 Tbsp. pineapple juice, reserved from Gold Deluxe Pineapple Chunks
½ tsp. ground cinnamon
pinch of salt
⅓ cup granulated sugar
2 Tbsp. unsalted butter
additional unsalted butter, for cooking
Add the eggs, coconut milk, vanilla extract, pineapple juice, ground cinnamon, and salt to a bowl. Whisk until well combined. Melt a tablespoon of the butter in a pan over medium heat. Dip both sides of the brioche into the custard mixture, allowing it to soak for a few seconds on each side.
Place the brioche onto the pan and cook for 2-3 minutes on each side until golden brown. Remove the brioche from the pan and cook the remaining french toast.
In a separate pan, melt the 2 tablespoons of butter over medium heat. Coat the Pineapple Chunks in the granulated sugar. Add the sugar-coated pineapple to the pan. Cook for 5 minutes until the pineapple has caramelized. Flip the pineapple onto the other side to caramelize for another 5 minutes. The pineapple should be tender and a caramelized syrup should have formed. Serve the french toast with a dollop of whipped cream and the caramelized pineapple and sauce on top.
