Ingredients
4 (6 oz) salmon filets
4 Tbsp. olive oil
2 tsp. lime zest
4 Tbsp. lime juice
3 garlic cloves, crushed
salt and pepper, to taste
1 (15 oz) can Del Monte Diced Mango, drained
3/4 cup chopped red bell pepper
1/4 chopped cilantro
1/3 cup chopped red onion
cooked rice blend, of rice
1 large avocadco, diced
cooked rice blend of choice

Directions
Add the salmon, 3 tablspeoons of olive oil, lime zest, 3 tablespoons of lime juice, garlic cloves, and salt and pepper to a resealable bag. Place it in the fridge and allow the salmon to marinate for 15-30 minutes.
Preheat a grill over medium high heat. Place the salmon onto the grill and cook on each side for about 3 minutes or until fully cooked through.
In a bowl, combine the Diced Mangoes, red bell pepper, cilantro, chopped red onion, remaining tablespoon of olive oil, and remaining tablespoon of lime juice. Season with salt and pepper to taste and toss to combine.
Serve the grilled salmon over rice and top with the avocado mango salsa.
