Skillet Chicken and Rice Almondine

This quick skillet dinner combines leftover chicken, rice and roasted garlic green beans – flavors the whole family loves, all in one dish. Sprinkle with almonds for a nice crunch.
½ cup slivered almonds, 2 oz.
1½ cups diced onion
2 cups chopped cooked chicken
1 cup uncooked instant white or brown rice
1 can (14.5oz.) Del Monte® French-Style Green Beans with Roasted Garlic, not drained
Salt and black pepper, optional
Lightly toast almonds in a medium skillet over medium-high heat, about 2 minutes, stirring constantly. Remove from skillet and set aside.
Coat the same skillet with non-stick cooking spray and cook onion 6 minutes over medium-high heat or until browned, stirring frequently.
Add chicken, rice, green beans and 1/2 cup water; stir gently until combined. Bring to a boil and reduce heat to medium-low. Cover and simmer 10 to 12 minutes or until rice is tender and liquid is absorbed. Remove from heat. Season to taste with salt and pepper, if desired.
Sprinkle with almonds before serving.
